If you don’t like very strong ginger flavor, you’ll be interested to know that according to Betty Crocker’s International Cookbook (Random House, 1980), the small branches that extend from the root have a milder flavor than does the trunk. I must admit that I sometimes just lop them off, in order to make the peeling process easier.
