Pick a Perfect Pumpkin

If you’re planning to make pumpkin pie, pumpkin soup, or anything pumpkin from scratch this season, don’t think that you can re-purpose the field variety that you may have decorating your yard for Halloween. It is likely to result in a stringy, watery puree. Instead, for a creamy, fairy tale finish, pick a sugar pumpkin (the smaller, rounder one) or a cheese pumpkin (the flat, tan one), both of which are better for cooking.

Of course, there is another possibility: Canned pumpkin puree. Just be certain that you buy 100 percent pumpkin, not pumpkin pie filling, even if you’re following a recipe for pumpkin pie.
